Mung Bean is a protein-rich heirloom bush bean grown for sprouting. Packed with vitamins and minerals, it is a top choice for home sprouting, and the beans are also delicious fresh or stir-fried. Compact bush plants carry smaller leaves and 3 to 4 inch pods, each holding 10 to 15 seeds, and a single plant yields about 14 sprout servings.

How to grow

Direct sow after the soil has warmed and frost has passed, planting about 1 inch deep in full sun with well-drained soil. For sprouting, soak the dried beans and rinse daily in a jar until sprouts form. In the garden, harvest pods once they mature and dry.
