Cylindra is a sweet heirloom beet, introduced to the US from Europe in 1892, with a long cylindrical root that slices into uniform rounds. Roots grow to about 8 inches with dark red flesh, and the slightly sweeter leaves make excellent salad greens.

How to grow
Sow seeds 1/2 inch deep in rows or solid-seeded, or start indoors and transplant in about 4 weeks. Thin plants to 4 inches apart in a single row or solid wide row block, in spring, summer, or fall. Since up to two-thirds of the root grows above ground, some gardeners hill soil around each plant to keep the skin tender. Maintain a weed-free bed in full sun with adequate moisture.
Flavor profile
Sweet and tender with dark red flesh, ideal sliced or pickled.
